Bank holiday means one thing: good food! Use the long weekend as an excuse to take a new recipe for a spin. Perhaps a next-level chicken caesar salad, an epic Mediterranean sarnie, or a tropical-flavoured tart? To help you with recipe inspiration, we’ve shared five brand new recipes which are all ideal for tucking into over the bank holiday.

These would make great outdoor-sharing food, however if rain means you can’t serve al fresco, move indoors and turn your feast into an informal party spread.

1. Chicken schnitzel caesar salad

Shake things up this bank holiday with this easy and versatile chicken salad, combining the flavours of a green goddess salad and a classic caesar with the textures of crispy chicken schnitzel. So good, it may become your new go-to.

2. Mango & passion fruit curd sunshine tart

Bring sunshine to the table with this tropical mango & passion fruit tart. You could finish it with a dusting of icing sugar, alternatively decorate with extra mango, passion fruit, toasted coconut and fresh mint.

3. Mortadella, burrata & pistachio pesto ciabatta

Layer mortadella – a luncheon meat made of ground cured pork – with creamy burrata (or mozzarella), green olives and a fresh pistachio pesto for an epic bank holiday sarnie. If you’re taking this sandwich on a picnic, it benefits from being pressed for a few hours, but if you want to enjoy it at home, you can tuck in straightaway.
